I came across the Cupcake Queen’s ingenius chocolate chip cookie and brownie cupcake idea at 52 Cupcakes and immediately knew I had to try them myself. What could be more scrumptious than a chocolate chip cookie and a brownie in one I ask you? Not much I can tell you that. I’ve made many a cupcake and had a reputation of making a pretty darn good one. But I wasn’t sure if I could rise to the cupcake challenge …
So I began by whipping up some chocolate brownies from a mix I got at Trader Joe’s and went to town using Brian Patterson’s The Perfect Chocolate Chip Cookie recipe the Cupcake Queen used. Now I have been looking for a perfect chocolate chip cookie for years (as one of my main staple cookies I make each year for Christmas). This one is pretty good too.
Next, I filled the cupcake liners with 2/3 brownie mix and rolled the dough into a ball and flattened on top of the brownie (per the Cupcake Queen’s directions). Threw the cupcakes into the oven and waited. My cakes took a lot longer to bake. But soon enough, they were done. Yay!
They came out OK except some of the cookie had sunken in on some of the cupcakes. I think it might be that the dough was too heavy. But the taste test proved that all was not in vain. Yummy! I even tested out my cupcake carrier that I got from The Container Store. Success!
